One of my favorite things about going for runs is getting to take in the beautiful scenery, so lately I have been walking just a bit to mix things up (better workout because it keeps your body guessing) and it's given me time to take a few pictures...

What's for dinner {5} // Vegetarian Fried Rice Recipe

Monday Dave and I cooked this meal up and I knew you all would love it so I made sure to take pictures for you all, you know, because I'm nice like that :) Again, this was another meal that was so easy, cheap, and oh so delicious!

Cook some brown rice, we used our rice cooker, but a pan would work just fine too...

Slice up some extra firm tofu and saute it in a pan, we poured some sunflower oil in the bottom first and then sprinkled the tofu with cayenne pepper and a bit of low-sodium soy sauce...

 Add the rice to the tofu, pour in a can of chop suey, and add your favorite sauce...we used General Tso's, so good! Mix it all up...

Let's be real...

...perusing a career in music is tough. I know I have been posting so much recently about all the great things that are happening for Dave's music (and they are wonderful), but that doesn't mean that we are on the downhill slide of this journey. Instead we are thankful for all the great opportunities coming our way and that things are still moving forward, but it also makes us realize how much further we have to go...

Also, these opportunities don't come without their cost. You have to spend money to make money, right? Well we are definitely still in the spend money side of things. While the album has been selling and things like that, we won't see money from iTunes for awhile still. Plus, the money from the television shows won't be coming until at least next spring. But, I've said it before and I'll say it again...Dave and I know that money is not what is important in life. We feel like we are blessed beyond measure to have found one another and that we're able to be together every day. That's what matters most in life to us.

...but that doesn't mean that some days aren't rough. Everyone has their moments. Some days you just wake up with the weight of the world on your shoulders and you feel like all of the hard work you've been doing doesn't matter. And boy do we work hard. Some nights we have to make ourselves step away from the computer (work) and go to bed because it's late. But there is always something more you could be doing. To me it's worth it if it helps one more person hear Dave's music.

North Carolina?

Have you guys heard of the band Onward Soldiers before? If not, consider this your lucky day :) I looove their song "Let the Time Roll by" (video below)...plus it's the perfect Friday afternoon song, enjoy!


Also, they live in North Carolina, which is one of the places on our list of top places to move right now, along with Texas. What do you all think about that? Any of you live in/near North Carolina? What's for dinner {4} // Vegetarian Tamale Pie Recipe.

Monday I made Dave and I this dish I found on Pinterest. (If you're on there add me!) These vegetable tamale pies were amazing and super cheap to make, I will definitely be making them again. For dinner we put some of it on lettuce cups and ate them as wraps. My mouth is watering just thinking about it. I made a few changes to the recipe so I will share how I made it.

Ingredients~
   -1 cup cornmeal
   -sea salt
   -1 can black beans
   -1 can diced tomatoes
   -1/2 c salsa
   -2 tsp cumin
   -1/4 tsp cayenne
   -1 tsp oregano
   -1/4 cup jalapeno slices
   -Mexican cheese

1. Bring 4 c water to boil in medium sauce pan. Stir in cornmeal slowly. Continue to stir until it begins to thicken (about 2 minutes). Add 1 tsp sea salt. Reduce heat to low and stir occasionally for about 15 minutes.

2. Spread a layer of the cornmeal mix onto the bottom of your dish. I used two circular dishes about . Preheat oven to 350.

3. Drain the tomatoes and beans. In mixing bowl, mash beans with a spoon (I find that's easier than a fork), I did it until they were about half mashed and some were still whole beans. Add tomatoes, salsa, cumin, cayenne, oregano, jalapenos, and 1/2 tsp sea salt. Mix.

4. Pour mixture in the dish(es). Top each dish with cheese. Bake about 25 minutes.

TV Liscensing!

If you follow Dave and I on twitter (you can find us at @daveowensmusic and @mallorieowens) then you've probably seen us talk about some of the networks that have picked up Dave's music for licensing...which means they can use Dave's music for their shows starting this fall. We are so excited!

His album "Love via Music" has been picked up by many networks and shows, it's just another step that helps to remind us that all the hard work we're putting into this is paying off for his music career. I'm so proud of him for following his dream, even when it's hard.

There are more contracts coming in, but here's the list so far, you ready?

-Oxygen

...exciting right? I was really happy but it didn't quite sink in until I called my best friend to tell her all the networks that had picked it up, that's when it started to become real. I can't wait until we hear Dave's song on a show, I just might cry.

...I can't believe it's only been a few months since we released the album and we've already seen such a great response, but I'm not surprised since it turned out so great. Can't wait to see what happens next :)

Last night...

Our dinner Sunday night was so fab and yet so simple that I had to share. One of the things I realized while taking the weekend off is that I'd like to try more new recipes. This is one we've done before, but today I made a new one from Pinterest I'll post the pics and recipe link soon, it was so good!

Last night we made ahi tuna steaks from Target, Alexia whole wheat rolls with some olive oil to dip it in (with some lemon pepper, italian seasoning, and tiny bit of garlic salt), and some veggies with lemon pepper on them. Healthy and delicious...of course we topped of the night with some froyo from Orange Leaf :)
